Apparently I’m on trend. Funny how these things come around. When I moved out of my small town I became the nice enough but weird girl who was always wearing cowboy boots, flannel and the occasional Native American inspired shirt. I’ve always loved dream catchers, feathers, turquoise and wearing earrings that don’t match.  I’ve also always loved juicing. Now, all of the sudden, I have the right style and rather than being a silly hippie with her green juice I am the cool girl with the mason jar full of yummy stuff. Yep, seems everybody is doing is these days. Just this morning I heard a very nice sounding mother of 3 boys talk about how she’s been enjoying a fresh green juice every morning rather than her regular cup of coffee. This, I think, is awesome.

I can’t begin to tell you how great juicing is. Well actually I can. Here a just a few from Dr Mercola:

  1. Juicing helps you absorb all the nutrients from the vegetables. This is important because most of us have impaired digestion as a result of making less-than-optimal food choices over many years. This limits your body’s ability to absorb all the nutrients from the vegetables. Juicing will help to “pre-digest” them for you, so you will receive most of the nutrition, rather than having it go down the toilet.
  2. Juicing allows you to consume an optimal amount of vegetables in an efficient manner. If you are a carb type, you should eat one pound of raw vegetables per 50 pounds of body weight per day. Some people may find eating that many vegetables difficult, but it can be easily accomplished with a quick glass of vegetable juice.
  3. You can add a wider variety of vegetables in your diet. Many people eat the same vegetable salads every day. This violates the principle of regular food rotation and increases your chance of developing an allergy to a certain food. But with juicing, you can juice a wide variety of vegetables that you may not normally enjoy eating whole.

 

There are many more benefits to juicing, increased energy, better digestion, improved immunity, weight loss, the list goes on and on. BUT, if you’ve never juiced before the task can seem daunting. Start by buying your juice from a business devoted to juicing. Here in Portland my two favorite place to go are Prasad and Kure. They will steer you in the right direction with plenty of juice combinations to choose from. Sweet to savory you’re bound to find some that resonate with you. When you’re feeling a bit more adventurous get yourself a mid-range juicer and go for it. Here are a couple of recipes to get you started.

 

COMPTON’S CURE

1/2 cucumber (peel left on)

2 carrots

1 apple

1 beet

1/2 in. ginger root
